Cooking in the condo? Here are 4 delicious recipes

Ah, vacation.

No chores, no work (let’s hope – unplug while you’re here, okay?). A vacation to Myrtle Beach serves a great purpose: to allow your batteries (not your devices’!) recharge.

So why in the world would you want to plan meals to cook in your condo’s kitchen? Cobbling together a family favorite or new recipe and picking out a movie while on a getaway is also a pretty special event.

And you’ll get tired of takeout eventually. This is one of the reasons we’re relieved to come home, even after an incredible trip to Myrtle Beach. Home-cooked meals! If you’re a couple on a long weekend or a family taking a week off, tackling a delicious meal together in the kitchen is a great way to strengthen bonds and have fun.

Easiest meals to make on vacation

1. Cinnamon Roll Blueberry French Toast Bake

These cinnamon rolls are definitely Myrtle Beach-getaway worthy!

What you’ll need:

  • Cinnamon rolls
  • Blueberries
  • Egg
  • Milk
  • Vanilla extract
  • Ground cinnamon

What you’ll do:

  1. Preheat oven to 375 degrees and grease a 9×9 baking dish
  2. In a medium bowl, mix egg, ground cinnamon, milk, and vanilla until combined
  3. Cut cinnamon rolls into bite-sized pieces
  4. In a bowl, mix blueberries and cinnamon rolls
  5. Pour blueberries and cinnamon rolls and blueberries into the greased baking dish
  6. Bake for 20-25 minutes until golden brown and delicious

TRY: Different additions, such as cranberries, raisins, or strawberries

2. Classic Seafood Boil

You’re in Myrtle Beach, after all. Pick up the fresh catch and enjoy it.

What you’ll need:

NOTE: Amounts will vary by type of seafood and size of the pot. The best assortment contains:

  • Clams
  • Corn on the cob
  • Crab legs
  • Old Bay or another favorite seasoning
  • Red potatoes
  • Shrimp
  • Smoked Sausage
  • Red Potatoes
  • Fixings: cocktail sauce, hot sauce, lemon, butter, salt and pepper

What you’ll do:

  1. Prep seafood ingredients (leave shells on shrimp)
  2. Slice sausage in 3-inch chunks, half large potatoes, and cut corn in half
  3. Fill the bottom of the pot (almost to the insert) with water
  4. Add the first layer of ingredients (whatever takes longest to cook, with a sprinkle of seasoning between layers
  5. Bring to a boil and cook 15 minutes
  6. Add clams with a sprinkle of seasoning (add shrimp and crab legs when clams open, about 8 minutes)
    7. Meal is finished when crab legs are warmed through and shrimp are pink
  7. Serve with melted butter and the rest of the fixings

TRY: Cooking time will have to be adjusted for the type of cooktop, the size of the pot, the number of ingredients, and what you have.

3. Hawaiian Roll Ham and Cheese Sliders

Tasty, simple, easy to clean. What could be better for a family dinner in Myrtle Beach?

What you’ll need:

  • Pack Hawaiian rolls
  • Pack of deli ham
  • Pack of provolone cheese
  • Butter and Worcestershire sauce to taste
  • Disposable pan

What you’ll do:

  1. Slice the entire package of rolls in half in one motion
  2. Place bottoms in a disposable pan
  3. Layer ham and provolone cheese slices on the roll bottoms
  4. Top with roll tops
  5. Drizzle with butter and Worcestershire mix
  6. Bake 20 minutes

4. Smoked Sausage and Veggie Kabobs

Kabobs just scream vacation – or at least party – or even both, don’t they?

What you’ll need:

  • 1 package Polish kielbasa links
  • 1 large, diced zucchini
  • 1 large, diced yellow squash
  • 1 large, diced sweet onion
  • 1 large, diced red bell pepper
  • 8 ounces baby portabella mushrooms (about 6-8 mushrooms)
  • 1 cup prepared cilantro and lime vinaigrette dressing
  • Bamboo skewers

What you’ll do:

  1. Thread onion, peppers, mushrooms, sausage, squash, and zucchini on skewers
  2. Preheat skillet on medium heat
  3. Add kabobs to skillet, turning frequently, for 10-15 minutes or until vegetables are tender and sausage is browned
  4. Brush kabobs with dressing on every flip
